A quick and easy recipe for the whole family when feeling peckish and in need of something sweet. This delicious recipe is vegan friendly, Gluten Free and takes only a few minutes to prepare.

You will need:

1KG Ripe Bananas (the browner the better :P)
2x Cup of Cassava Flour
1x Cup (250ml) Coconut milk
1/2x Cup Coconut Blossom
1x Tablespoon Cacao powder
1x Teaspoon  Xanthan Gum
1x Teaspoon Vanilla Essence
50/100g Desiccated Coconut

Directions to prepare:

1. Start with all the bananas by removing the outer skin. Once complete place these into a large bowel and mash/blend these into a smooth consistency.

2. Add your Flour, Cacao powder, Coconut blossom and Vanilla Essence to the bowel and mix thoroughly  whilst maintaining the smooth thick consistency. 

3. If too thick, slowly place the coconut milk in while mixing to ensure you have the right consistency.

4. Once complete, pour into a prepared square baking tray or Pyrex dish.

5. Place into a preheated oven at 180*C for 25/30min. 

6. Once cooked, slice into squares and decorate with coconut and/or cacao powder.
